I do not think the taste from either the electric or gas matters but I personally think you can control the temperature better with a gas stove. You can keep a constant flame as opposed to a lot of electric stoves where the heat comes and goes. It just helps to control your cooking better with a gas stove, I think.

Why does something cooked on a wood stove taste so good? When you cooking on a wood stove , the heat is usually more even and the temperature is usually lower than being cooked on electric or gas. This slow simmering of the food makes it take on a different flavor than if it is cooked faster . And the slow cooking usually is more tenderizing.

There is also a minor difference in the flavor imparted by combustion gasses, the volatile byproducts given off by the burning of the charcoal or the gas. When propane combusts it makes more steam than charcoal, and some say that keeps meat moist giving gas an advantage.

Even better. Ironically enough, it’s the volatile compounds in the food, not in the briquettes, that are responsible for charcoal grilling’s distinct flavors.

Gas stove stops are more expensive to install than the electric type. Heating Time. Unlike ovens, there is less difference between the heating time of electric and gas stoves due to how the food cooks. In an oven, the entirety of the interior is being heated and cooking the food.

STOVE: faster. GAS: fastest. easy as a.b.c, the only difference is that in the case of the firewood smoke from the fire manages to mix into the food and that gives it a kind of 'smokey' taste. If this taste is what your taste buds recognize as being 'sweet' then you are seriously on a very very long thing.

Gas ovens reach higher cooking temperatures faster than an electric oven. You also have more control over the cooking temperature with it. The temperature instantly cools down as soon as you turn it off. The trade-off, however, is cold spots and hot spots. Gas ovens tend to have several of these, which you can remedy by using fans.

It works at a low temperature, which cooks the meat evenly. As a result, the steak or barbeque has a little smoky taste. Pellet grills generally cost more than the gas grill because pellets are not available in many areas compared to the gas. On the other hand, gas grills cook food faster and impart sear marks on the

Are gas or electric ranges better? Consumer Reports weighs in with the results of its extensive tests, noting that each type of range has its strengths, and they're not what you might assume.

By using gas to fuel the stove, you are getting just the right amount of heat needed to cook your food – with no residual heat. In the electric oven, your temperature will maintain itself which means you will no longer need to open and turn your food for even baking. Both of these will keep the heat emitted from the range to a minimum.

According to Steve Raichlen's Barbecue Bible, you need low temperatures (215 to 225 degrees Fahrenheit) and long cooking times to melt that collagen, along with the other tough connective tissue in the brisket. Some pitmasters increase their temps to 285 to 325 degrees, but you can't go much hotter than that.
